Gin. You either love it or you hate it. If you reside in column A, then you need to know about Project Botanicals. Launching *tonight*, this pop up bar and dining experience is doing crafty things with the versatile liquor as Gary Mehigan joins forces with Bombay Sapphire Ambassador, Andy Wren, to create a cocktails and tapas extravaganza.
Thanks to the botanicals found in gin - like juniper berries, coriander seeds and almonds - it is a match made in heaven with food. Which makes it perfect for us Melburnians to enjoy the Project Botanicals experience for the next three weeks in North Melbourne. Bless those botanicals.
Cocktails will adopt recipes from Eau De Vie and Gin Palace, paired with a selection of 10 dishes such as crispy fried pork belly with chilli caramel and pickled daikon radish. YUM!
For the real ginatics among us, Project Botanicals will also offer the first opportunity to try Bombay Sapphire's new super premium expression, Star of Bombay.
Open for three weeks from 24 June to 11 July, sittings are available from 6pm-1am Wednesday to Saturday, for $45pp (plus booking fee) which includes two cocktails and two matched dishes. If you're ready for the whole 10 course hog, additional cocktails and dishes can be acquired for $12 each.
